The cornea of the eye, for example, is separated from the body's immune system (if it was exposed, our body's B-cells would secrete antibodies against corneal proteins and destroy it). It also has a lot of mucosa and is exposed to the outside environment...so it is prone to microbial growth. The fluid in the eye generally keeps that from happening. When we are crying, something bad has happened and we are emotionally (and immunologically) vulnerable. So the theory says that crying keeps the cornea safe. Partly because of the poisons lurking in them as you mention but also because they have low nutritive value. One would need to eat a lot of flowers to satisfy our nutritional requirements. Also, as you mention, they have a concentrated mix of metabolites which can seem quite intense as a stand-alone food. Hence, their use as spices.
